Ingredients

8 slices rye bread

8 slices Swiss cheese

1 pound corned beef, sliced

1 1/2 cups sauerkraut, drained well

1/3 cup Russian dressing or Thousand Island dressing

4 tablespoons butter, softened

1 tablespoon chopped fresh parsley, optional for garnish


Instructions

1. Drain the sauerkraut very well and pat it dry with paper towels to remove excess moisture.

2. Spread butter on one side of each slice of rye bread.

3. Spread Russian dressing or Thousand Island dressing on the unbuttered side of each bread slice.

4. Layer 4 slices of bread dressing-side up with 1 slice Swiss cheese, corned beef, sauerkraut, and another slice of Swiss cheese.

5. Top with the remaining bread slices, keeping the buttered side facing outward.

6. Heat a large skillet over medium to medium-low heat.

7. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.

8. Remove from the skillet, rest for 1 minute, slice in half, garnish with parsley if desired, and serve hot.

Notes

Always drain and dry the sauerkraut well so the bread stays crisp instead of soggy.

Cook over medium-low heat if needed so the cheese melts fully before the bread gets too dark.

Warming the corned beef slightly before assembling helps the center heat through faster and more evenly.
