Description

Ingredients

2 1/4 cups all-purpose flour

2 teaspoons baking powder

1 tablespoon instant espresso powder

1 tablespoon unsweetened cocoa powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 cup powdered sugar, for rolling

8 ounces mascarpone cheese

4 ounces cream cheese, softened

3/4 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons heavy cream


Instructions

1. In a medium bowl, whisk together the flour, baking powder, espresso powder, cocoa powder, and salt.

2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract.

4. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

5. Cover and chill the dough for 1 hour.

6. Preheat the oven to 350°F and line baking sheets with parchment paper.

7. Scoop the chilled dough into balls and roll each one generously in powdered sugar.

8. Arrange on the baking sheets and bake for 10 to 12 minutes, until puffed and crackled.

9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack and cool completely.

10. For the filling, beat the mascarpone, cream cheese, powdered sugar, vanilla, and heavy cream until smooth and fluffy.

11. Pipe or spoon the filling onto the flat side of half the cookies, then top with the remaining cookies.

12. Dust lightly with cocoa powder if desired, then chill for 15 minutes before serving.

Notes

Chill the dough well so the cookies keep their shape and develop better crinkles.

Roll each dough ball heavily in powdered sugar for the classic snowy finish.

Cool the cookies completely before filling so the mascarpone center stays thick and smooth.
