Ingredients

2 cups cooked shredded chicken

3 cups cooked rice

1 packet taco seasoning

1 1/2 cups salsa

1 cup sour cream

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup black beans, drained and rinsed

1 cup corn kernels

1 red bell pepper, diced

1/2 cup sliced black olives

2 green onions, sliced

1 tablespoon olive oil

1/4 cup chopped cilantro

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat the olive oil in a large skillet over medium heat, then add the shredded chicken, taco seasoning, garlic powder, onion powder, and black pepper.

3. Stir in the salsa and cook for 2 to 3 minutes until the chicken is evenly coated and warmed through.

4. Add the cooked rice, black beans, corn, and sour cream, then mix until everything is fully combined and creamy.

5. Spread the mixture evenly into the prepared baking dish.

6. Top with diced red bell pepper, sliced black olives, cheddar cheese, and Monterey Jack cheese.

7. Bake for 20 to 25 minutes until the cheese is melted and the casserole is hot and bubbly.

8. Let the casserole rest for 5 to 10 minutes before serving.

9. Finish with green onions and chopped cilantro, then serve warm.

Notes

Use rotisserie chicken to make this casserole even faster on busy nights.

Let the casserole rest before serving so it slices and scoops more cleanly.

For extra heat, use hot salsa or add diced jalapeños to the filling.
