Ingredients

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 tablespoons almond flour

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

18 slices mini pepperoni

1/8 teaspoon red pepper flakes


Instructions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

2. In a medium bowl, mix the mozzarella cheese, Parmesan cheese, egg, almond flour, Italian seasoning, garlic powder, black pepper, and red pepper flakes until fully combined.

3. Scoop small spoonfuls of the mixture onto the prepared baking sheet, spacing them apart evenly.

4. Gently flatten each portion into thin rounds so the chips bake up crisp.

5. Top each round with mini pepperoni slices, pressing them in lightly.

6. Bake for 10 to 14 minutes, until the edges are deep golden brown and crisp.

7. Let the chips cool on the pan for 5 to 10 minutes so they firm up.
