Ingredients
1 lb sausage
3 medium sweet potatoes
1 tbsp olive oil
1 small onion
2 cloves garlic
1 1/2 cups mozzarella cheese
1 cup cheddar cheese
2 green onions
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Peel the sweet potatoes and cut them into small even cubes.
3. Cook the sausage in a large skillet over medium heat until browned, breaking it into crumbles as it cooks.
4. Remove the sausage and cook the chopped onion in the same skillet for a few minutes until softened.
5. Add the minced garlic and cook for 30 seconds.
6. In a large bowl, toss the sweet potatoes with olive oil, salt, black pepper, and paprika.
7. Spread the sweet potatoes into the baking dish and top with the cooked sausage, onion, and garlic mixture.
8. Cover loosely with foil and bake for 30 minutes.
9. Remove the foil, sprinkle mozzarella and cheddar cheese over the top, and bake uncovered for 10 to 15 minutes more.
10. Rest for 5 minutes, then top with sliced green onions and serve.
