Ingredients

2 cups fresh strawberries, hulled and sliced

1 package strawberry gelatin mix, 3 ounces

1 container whipped topping, 8 ounces, thawed

2 cups mini marshmallows

1 can crushed pineapple, 8 ounces, well drained

1 cup cottage cheese

1 banana, sliced, optional

2 tablespoons extra mini marshmallows for garnish

2 tablespoons extra sliced strawberries for garnish

Instructions

1. Wash, hull, and slice the strawberries into bite-sized pieces. Drain the crushed pineapple very well, and slice the banana if using.

2. In a large mixing bowl, stir together the cottage cheese and strawberry gelatin mix until evenly combined and pink.

3. Fold in the whipped topping gently until the mixture is smooth, fluffy, and fully blended.

4. Add the sliced strawberries, drained crushed pineapple, mini marshmallows, and banana if using. Fold everything together carefully so the fruit stays intact.

5. Cover the bowl and chill the salad in the refrigerator for at least 1 hour to let the texture set and the flavors blend.

6. Before serving, garnish with extra strawberries and mini marshmallows. Serve cold.

Notes

Drain the pineapple thoroughly so the salad stays fluffy instead of watery.

Add the banana just before serving if you want the freshest texture and color.

Fold gently when mixing so the whipped topping keeps the salad light and airy.
