Description

These Mediterranean chicken skewers are a bright, easy dinner packed with juicy chicken, lemon, olive oil, herbs, and colorful vegetables. Ingredients

2 pounds chicken breast, cut into cubes

3 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 large red bell pepper, cut into chunks

1 medium red onion, cut into chunks

2 tablespoons fresh dill or parsley, chopped

1 cup tzatziki

1/2 cup mixed olives

1 lemon, cut into wedges


Instructions

1. Cut the chicken breast into even bite-sized cubes and place them in a large mixing bowl.

2. Add olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper, then toss until the chicken is fully coated.

3. Let the chicken marinate for 20 to 30 minutes for better flavor.

4. Thread the chicken onto skewers, alternating with red bell pepper and red onion pieces.

5. Heat a grill, grill pan, or skillet over medium-high heat.

6. Cook the skewers for 10 to 12 minutes, turning every few minutes, until the chicken is cooked through and lightly charred.

7. Transfer to a serving platter and sprinkle with fresh dill or parsley.

8. Serve with tzatziki, olives, and lemon wedges.

Notes

Use evenly sized chicken pieces so the skewers cook at the same rate.

If using wooden skewers, soak them in water for at least 30 minutes before cooking.

Do not overcook the chicken or it can dry out, so remove it as soon as it reaches a safe internal temperature.
