Description

This Lemon Cottage Cheese Mousse is a light, creamy, easy recipe packed with fresh citrus flavor and silky texture, perfect for a healthy snack, quick breakfast treat, simple dessert, and fresh food idea when you want bright no-bake lemon goodness.


Ingredients

1 cup cottage cheese

4 oz cream cheese, softened

3 tbsp fresh lemon juice

2 tsp lemon zest

3 tbsp honey

1 tsp vanilla extract

1/2 cup heavy whipping cream

1 tbsp powdered sugar

Extra lemon zest for garnish

Mint leaves for garnish


Instructions

1. Add the cottage cheese, softened cream cheese, lemon juice, lemon zest, honey, and vanilla extract to a blender or food processor.

2. Blend until completely smooth, stopping to scrape down the sides as needed.

3. In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.

4. Transfer the blended lemon mixture to a mixing bowl.

5. Gently fold the whipped cream into the lemon mixture until fully combined and fluffy.

6. Spoon the mousse into 4 small serving glasses or ramekins.

7. Cover and refrigerate for 1 to 2 hours until chilled and slightly set.

8. Garnish with extra lemon zest and mint leaves before serving.

Notes

Blend the cottage cheese thoroughly so the mousse turns out silky rather than grainy.

Chill the mousse long enough so the flavor settles and the texture firms up.
