Ingredients
2 large russet potatoes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon chopped parsley
Instructions
1. Wash the potatoes well and slice them into very thin rounds using a mandoline or a sharp knife.
2. Place the potato slices in a bowl of cold water and soak for 20 to 30 minutes to remove excess starch.
3. Drain the potatoes and pat them completely dry with paper towels or a clean kitchen towel.
4. Transfer the slices to a mixing bowl and toss with olive oil, salt, black pepper, and garlic powder.
5. Arrange the potato slices in the air fryer basket in a light single layer, working in batches if needed.
6. Air fry at 325°F for 12 to 16 minutes, flipping or shaking every few minutes until golden and crisp.
7. Remove the chips as they finish, transfer to a plate or wire rack, and sprinkle with chopped parsley before serving.
Notes
Dry the potato slices very well before seasoning so they crisp instead of steam.
Slice the potatoes as evenly as possible so the chips cook at the same speed.
Remove smaller or thinner chips early to keep them from overbrowning.
