Description

Fire up dinner with these Grilled Shrimp Pineapple Skewers, a quick dinner packed with smoky shrimp, sweet pineapple, fresh lime, and bold seasoning. Ingredients

1 pound large shrimp, peeled and deveined

2 cups fresh pineapple chunks

2 tablespoons olive oil

2 cloves garlic, minced

2 tablespoons lime juice

1 teaspoon paprika

1/2 teaspoon chili flakes

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley or cilantro

1 lime, cut into wedges


Instructions

1. Soak wooden skewers in water for 20 to 30 minutes if using wooden skewers.

2. Pat the shrimp dry and place them in a mixing bowl.

3. Add olive oil, garlic, lime juice, paprika, chili flakes, salt, and black pepper, then toss until the shrimp are well coated.

4. Let the shrimp marinate for 10 to 15 minutes.

5. Thread the shrimp and pineapple onto skewers, alternating pieces evenly.

6. Preheat the grill to medium-high heat and lightly oil the grates.

7. Grill the skewers for 2 to 3 minutes per side until the shrimp are opaque and lightly charred and the pineapple has grill marks.

8. Remove from the grill, sprinkle with parsley or cilantro, and serve with lime wedges.

Notes

Keep the pineapple chunks slightly larger than the shrimp so they stay secure on the skewers while grilling.

Do not overcook the shrimp because they can turn rubbery very quickly.

A quick brush of extra lime juice right after grilling makes the flavors pop even more.
