Ingredients

2 1/2 lb beef tenderloin roast

1 1/2 tsp salt

1 tsp black pepper

1 tbsp olive oil

4 tbsp unsalted butter, softened

4 cloves garlic, minced

1 tbsp fresh rosemary, finely chopped

1 tbsp fresh thyme, finely chopped

1 tbsp fresh parsley, finely chopped


Instructions

1. Remove the beef tenderloin roast from the refrigerator 30 to 45 minutes before cooking and pat it dry with paper towels.

2. Trim excess fat or silver skin if needed, then tie the roast with kitchen twine if necessary for an even shape.

3. Season the roast all over with salt and black pepper.

4. In a small bowl, mix the softened butter, minced garlic, rosemary, thyme, and parsley until well combined.

5. Preheat the oven to 425°F.

6. Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat.

7. Sear the beef tenderloin on all sides for 2 to 3 minutes per side until browned.

8. Spread part of the garlic herb butter over the top and sides of the roast.

9. Transfer the pan to the oven and roast for 20 to 30 minutes, or until the internal temperature reaches 130 to 135°F for medium-rare.

10. Remove the roast from the oven and loosely tent with foil. Let it rest for 10 to 15 minutes.

11. Slice the beef tenderloin and spoon the remaining garlic herb butter over the top before serving.

Notes

Use a meat thermometer and check early so the tenderloin does not overcook.

Letting the roast rest before slicing keeps the juices in the meat.
