Ingredients

12 ounces rigatoni or penne pasta

1 pound ground beef

2 tablespoons olive oil

4 tablespoons butter

5 cloves garlic, minced

1 teaspoon salt, plus more for pasta water

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

3/4 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1/2 cup reserved pasta water


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup pasta water, then drain.

2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles.

3. Season the beef with salt, black pepper, and red pepper flakes.

4. Reduce the heat to medium and add the butter to the skillet.

5. Stir in the minced garlic and cook for 30 to 60 seconds until fragrant.

6. Add the drained pasta to the skillet and toss with the beef and garlic butter mixture.

7. Pour in the reserved pasta water a little at a time and stir until the pasta looks glossy and lightly coated.

8. Add the Parmesan cheese and parsley, then toss until everything is evenly combined.

9. Taste and adjust seasoning if needed, then serve hot with extra Parmesan on top.

Notes

Salt the pasta water well so the noodles have flavor from the start.

Do not let the garlic brown too much or it can turn bitter.

Add the pasta water gradually so the sauce stays silky instead of watery.
