Ingredients

2 cups granulated sugar

1/2 cup unsalted butter

1/2 cup milk

1/4 cup unsweetened cocoa powder

1/2 cup creamy peanut butter

1 teaspoon vanilla extract

1 pinch salt

3 cups quick oats


Instructions

1. Line a baking sheet, tray, or large plate with parchment paper.

2. Add the granulated sugar, unsalted butter, milk, and unsweetened cocoa powder to a medium saucepan.

3. Place the saucepan over medium heat and stir until the butter melts and the mixture becomes smooth.

4. Bring the mixture to a full rolling boil and let it boil for 1 minute while stirring often.

5. Remove the saucepan from the heat.

6. Stir in the creamy peanut butter, vanilla extract, and salt until fully melted and glossy.

7. Add the quick oats and mix until all the oats are fully coated.

8. Scoop spoonfuls of the mixture onto the prepared parchment paper.

9. Let the cookies set at room temperature for 20 to 30 minutes, or chill for 10 to 15 minutes until firm.
