Ingredients
2 pounds chicken thighs or chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth
3/4 cup heavy cream
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the chicken dry and season both sides with paprika, Italian seasoning, salt, and black pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the chicken and sear for 4 to 5 minutes per side until golden brown. Remove to a plate.
4. Add butter and chopped onion to the same skillet, then cook for 3 to 4 minutes until softened.
5. Stir in the garlic and cook for 30 seconds.
6. Pour in the chicken broth and scrape the bottom of the skillet to loosen the browned bits.
7. Stir in the heavy cream and let the sauce simmer for 2 to 3 minutes.
8. Return the chicken to the skillet and spoon some sauce over the top.
9. Cover and cook over medium-low heat for 10 to 15 minutes, or until the chicken is fully cooked.
10. Sprinkle with fresh parsley and serve hot.
