Ingredients

2 medium cucumbers

2 large carrots

2 tablespoons chopped fresh parsley

1 tablespoon sesame seeds

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon soy sauce

1 teaspoon honey

1 small garlic clove, minced

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash the cucumbers and carrots thoroughly.

2. Slice the cucumbers into thin ribbons with a vegetable peeler or cut them into thin rounds.

3. Peel and grate the carrots or cut them into fine matchsticks.

4. Add the cucumbers, carrots, and chopped parsley to a large mixing bowl.

5. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, honey, minced garlic, salt, and black pepper.

6. Pour the dressing over the vegetables and toss gently until everything is evenly coated.
