Description

Easy Corned Beef Hash is a quick breakfast, easy dinner, and comforting skillet meal packed with crispy potatoes, savory corned beef, and tender onions. This easy recipe is perfect for breakfast ideas, brunch spreads, simple dinner ideas, and cozy food ideas when you want something hearty, filling, and full of classic flavor.


Ingredients

2 tablespoons butter or oil

3 cups potatoes, diced small

1 cup onion, finely chopped

2 cloves garlic, minced

2 cups corned beef, diced

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon salt

2 tablespoons fresh chives or parsley, chopped

4 eggs, optional for serving

toast, optional for serving


Instructions

1. Dice the potatoes into small even cubes, chop the onion, mince the garlic, and cut the corned beef into bite-sized pieces.

2. Heat the butter or oil in a large skillet over medium heat.

3. Add the potatoes and spread them into an even layer. Cook for 10 to 12 minutes, stirring only occasionally, until they begin to brown and soften.

4. Add the chopped onion and cook for 4 to 5 minutes until soft and lightly golden.

5. Stir in the garlic and cook for 30 seconds.

6. Add the corned beef, black pepper, paprika, and salt. Stir well and cook for 5 to 7 minutes until the beef is heated through and the edges start to crisp.

7. Sprinkle with fresh chives or parsley.

8. Cook the eggs in a separate skillet or in open space in the same pan until done to your liking.

9. Serve the hash hot with eggs on top and toast on the side if desired.

Notes

Dice the potatoes evenly so they cook at the same speed and crisp more nicely.

Do not stir the skillet too often or the potatoes will steam instead of browning.

Taste before adding extra salt because corned beef is already quite salty.
