Ingredients
12 ounces egg noodles
3 cups cooked shredded chicken
2 cups frozen peas and carrots
2 cans cream of chicken soup
1 cup sour cream
1/2 cup chicken broth
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup breadcrumbs
3 tablespoons melted butter
2 tablespoons chopped fresh parsley
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Bring a large pot of salted water to a boil and cook the egg noodles until just al dente. Drain well.
3. In a large bowl, stir together the cream of chicken soup, sour cream, chicken broth, onion powder, garlic powder, salt, black pepper, and half of the Parmesan cheese until smooth.
4. Fold in the shredded chicken, frozen peas and carrots, cheddar cheese, and cooked noodles until evenly coated.
5. Spread the mixture evenly into the prepared baking dish.
6. In a small bowl, combine the breadcrumbs, melted butter, and remaining Parmesan cheese.
7. Sprinkle the breadcrumb mixture evenly over the casserole.
8. Bake uncovered for 25 to 30 minutes, until hot and bubbling with a golden brown top.
9. Rest for 5 to 10 minutes, then finish with chopped parsley and serve warm.
Notes
Use al dente noodles so they do not get too soft after baking.
Rotisserie chicken works perfectly and makes prep much faster.
For an extra crisp topping, broil the casserole for 1 to 2 minutes at the end.
