Description

These Easy Carrot Cake Pops are a fun, easy dessert packed with cozy carrot cake flavor in a bite-sized treat. They are perfect for spring parties, Easter dessert tables, healthy snack style portions, quick breakfast sweet cravings, easy recipe planning, dessert ideas, food ideas, and make-ahead treats when you want something cute, simple, and crowd-pleasing.


Ingredients

2 cups crumbled carrot cake

1/2 cup cream cheese frosting

1 cup finely grated carrots

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

12 ounces white melting wafers

2 tablespoons toasted coconut

2 tablespoons finely chopped pecans

12 lollipop sticks


Instructions

1. Bake or prepare the carrot cake and let it cool completely.

2. Crumble the cake into a large bowl until very fine.

3. Mix in the cream cheese frosting, grated carrots, cinnamon, nutmeg, and vanilla extract until the mixture holds together.

4. Scoop and roll the mixture into 12 even balls.

5. Place the cake balls on a lined tray and chill for 30 minutes.

6. Melt a small spoonful of the white coating and dip each lollipop stick tip into it, then insert into each cake ball.

7. Chill again for 10 minutes so the sticks set firmly.

8. Melt the remaining white melting wafers until smooth.

9. Dip each cake pop into the coating and tap off the excess.

10. Sprinkle with toasted coconut and chopped pecans before the coating sets.

11. Stand upright and let the coating harden completely before serving.

Notes

Do not overmix with frosting or the cake pops can become too soft to hold on the sticks.

Chill until firm but not frozen solid to help prevent cracking in the coating.

Use a deep narrow cup for dipping so the coating goes on more evenly.
