Ingredients
4 salmon fillets
2 cups fresh spinach
1 cup feta cheese, crumbled
4 oz cream cheese, softened
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp paprika
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat the oven to 400°F and line a baking dish or sheet pan with parchment paper.
2. Pat the salmon fillets dry and carefully cut a pocket into the side of each fillet without slicing all the way through.
3. Heat the olive oil in a skillet over medium heat, add the spinach, and cook until wilted.
4. Stir in the minced garlic and cook for 30 seconds, then remove from the heat.
5. In a bowl, mix the spinach, feta cheese, cream cheese, lemon juice, and a little black pepper until combined.
6. Spoon the filling evenly into each salmon pocket and press gently to help it stay in place.
7. Arrange the stuffed salmon fillets on the prepared pan.
