This Crock-Pot Chili Dog Casserole is the kind of easy dinner that makes everyone excited to eat. Ingredients
1 pound ground beef
8 hot dogs, sliced into bite-sized pieces
1 small onion, diced
2 cloves garlic, minced
1 can chili beans, 15 ounces
1 can tomato sauce, 15 ounces
1 can diced tomatoes with green chilies, 10 ounces
1 packet chili seasoning, 1 ounce
1 tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bag frozen tater tots, 32 ounces
1 1/2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon chopped parsley
Instructions
1. Brown the ground beef in a skillet over medium heat until fully cooked, then drain the excess grease.
2. Add the diced onion and minced garlic to the skillet and cook for 2 to 3 minutes until softened and fragrant.
3. Stir in the chili beans, tomato sauce, diced tomatoes with green chilies, chili seasoning, yellow mustard, salt, and black pepper. Simmer for 5 minutes.
4. Fold in the sliced hot dogs and stir until evenly combined with the chili mixture.
5. Lightly grease the crock pot insert, then spoon in the chili dog mixture and spread it into an even layer.
6. Arrange the frozen tater tots evenly over the top.
7. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until hot and cooked through.
8. Sprinkle the cheddar cheese and mozzarella cheese over the top during the last 20 to 30 minutes of cooking.
9. Cover again until the cheese is melted, then garnish with chopped parsley and serve hot.
Notes
For a thicker casserole, let the chili mixture simmer a few extra minutes before adding it to the crock pot.
If you want crispier tater tots, bake them separately and add them on top just before serving.
Cheddar gives the best chili dog flavor, but a blend with mozzarella makes the topping extra melty.
