Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2 large romaine hearts, chopped
1/2 cup Caesar dressing
1 1/2 cups croutons
1/2 cup grated Parmesan cheese
1 tablespoon lemon juice
Instructions
1. Pat the chicken breasts dry and season them with olive oil, salt, black pepper, and garlic powder.
2. Heat a skillet or grill pan over medium heat and cook the chicken for 5 to 7 minutes per side, or until fully cooked and golden brown.
3. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.
4. Wash and dry the romaine well, then chop it into bite sized pieces.
5. Add the romaine to a large bowl with the Caesar dressing and lemon juice, then toss until evenly coated.
6. Add the croutons and most of the Parmesan cheese, then toss gently again.
7. Top the salad with the sliced chicken and the remaining Parmesan cheese.
8. Serve immediately while the salad is crisp and fresh.
Notes
Use very dry romaine so the dressing clings well and the salad stays crisp.
Let the chicken rest before slicing so it stays juicy.
Add croutons just before serving to keep their crunch.
