Description

These Cannoli Cheesecake Bars are a rich, creamy easy dessert recipe with a buttery graham cracker crust, smooth ricotta cheesecake filling, mini chocolate chips, and a glossy chocolate topping. Ingredients

1 1/2 cups graham cracker crumbs

6 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

24 ounces cream cheese, softened

1 cup ricotta cheese

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 cup mini chocolate chips

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1 1/2 cups whipped cream

2 tablespoons mini chocolate chips for topping

2 tablespoons chocolate cookie crumbs for topping


Instructions

1. Preheat the oven to 325°F and line a 9×13-inch baking pan with parchment paper.

2. Mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar, then press the mixture firmly into the pan.

3. Bake the crust for 8 to 10 minutes and let it cool slightly.

4. Beat the cream cheese until smooth, then mix in the ricotta and 1 cup sugar.

5. Add the eggs one at a time, then mix in the vanilla extract and cinnamon.

6. Fold in 1 cup mini chocolate chips.

7. Spread the filling over the crust and bake for 38 to 45 minutes until mostly set.

8. Cool the bars completely, then refrigerate for at least 4 hours or overnight.

9. Heat the heavy cream and pour it over the semi-sweet chocolate chips, then stir until smooth.

10. Spread the chocolate topping over the chilled bars.

11. Finish with whipped cream, mini chocolate chips, and chocolate cookie crumbs.

12. Slice into bars and serve chilled.

Notes

Use softened cream cheese for the smoothest filling and to avoid lumps.

Chill the bars overnight if possible for cleaner slices and a firmer texture.

Add the whipped cream topping just before serving for the freshest finish.
