Description

This Buttery Ritz Cracker Chicken Casserole Dinner is the kind of easy dinner that instantly feels comforting, creamy, and satisfying. With tender shredded chicken, melty cheddar, smoky bacon, and a buttery cracker topping, it is a perfect easy recipe for busy weeknights, cozy family dinners, dinner ideas for guests, and simple food ideas when you want a hearty homemade meal without a lot of fuss.

Ingredients

3 cups cooked shredded chicken

1 can cream of chicken soup

1 cup sour cream

2 cups shredded cheddar cheese

8 slices cooked bacon, chopped

1 sleeve Ritz crackers, crushed

5 tablespoons unsalted butter, melted

3 green onions, sliced

1 teaspoon garlic powder

1/2 teaspoon black pepper

Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large mixing bowl, stir together the shredded chicken, cream of chicken soup, sour cream, 1 1/2 cups of the cheddar cheese, most of the chopped bacon, garlic powder, and black pepper until fully combined.

3. Spread the chicken mixture evenly into the prepared baking dish.

4. In a separate bowl, mix the crushed Ritz crackers with the melted butter until the crumbs are evenly coated.

5. Sprinkle the remaining 1/2 cup cheddar cheese over the casserole.

6. Scatter the buttery cracker topping evenly over the top.

7. Bake uncovered for 25 to 30 minutes, until hot and bubbly and the topping is golden brown.

8. Let the casserole rest for 5 minutes, then finish with the remaining bacon and sliced green onions before serving.

Notes

Use rotisserie chicken for a faster prep and extra flavor.

Add the cracker topping just before baking so it stays crisp and golden.

Let the casserole rest a few minutes after baking so it slices and serves more neatly.
