Ingredients
1 cup unsalted butter
1/2 cup honey
3/4 cup light brown sugar
1/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cup chopped pistachios
1 tablespoon powdered sugar
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. Add the butter to a light-colored saucepan over medium heat and cook until it foams and turns golden brown with a nutty aroma.
3. Pour the browned butter into a mixing bowl and whisk in the honey, light brown sugar, and granulated sugar until smooth.
4. Let the mixture cool for 5 minutes, then whisk in the eggs and vanilla extract until glossy.
5. Fold in the flour, salt, and baking powder just until combined.
6. Stir in most of the chopped pistachios, reserving a small amount for topping.
7. Spread the batter evenly into the prepared pan and sprinkle the reserved pistachios on top.
8. Bake for 28 to 34 minutes, until the edges are set and the center is just cooked through.
9. Cool completely in the pan, then lift out, dust with powdered sugar, and slice into bars.
Notes
Use a light-colored pan when browning butter so you can clearly see when the milk solids turn golden.
Do not overmix the batter after adding the flour or the bars can turn dense and tough.
Let the bars cool fully before slicing so they hold their shape and cut cleanly.
