Ingredients
1 cup water
6 tablespoons unsalted butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup all-purpose flour
1 large egg
1/2 cup Biscoff spread
vegetable oil for frying
1/2 cup granulated sugar
2 teaspoons ground cinnamon
2 tablespoons melted butter
Instructions
1. Add the water, butter, sugar, and salt to a medium saucepan and bring to a gentle simmer over medium heat.
2. Add the flour all at once and stir until a thick dough forms and pulls away from the sides of the pan.
3. Transfer the dough to a bowl and let it cool for 5 minutes.
4. Mix in the egg until the dough becomes smooth and glossy.
5. Spoon the Biscoff spread into a small piping bag or zip-top bag and set aside.
6. Heat 2 inches of vegetable oil in a heavy pot to 350°F.
7. Mix the cinnamon and sugar in a shallow bowl and keep the melted butter nearby.
8. Transfer the dough to a piping bag fitted with a large star tip.
9. Pipe short pieces of dough over the oil, snipping with scissors to make bite-sized pieces.
10. Fry in small batches for 2 to 3 minutes until golden brown and crisp.
11. Remove the bites and let them drain briefly on paper towels.
12. Brush or toss the warm bites with melted butter, then coat them in cinnamon sugar.
13. Pipe a small amount of Biscoff spread into the center of each bite.
14. Serve warm.
Notes
Keep the oil close to 350°F so the bites cook through without becoming greasy.
Fill the bites while they are still slightly warm for easier piping and a softer center.
Use a large star tip to get the ridged texture that helps the cinnamon sugar stick well.
