Ingredients
2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda

3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
3/4 cup crushed Oreo cookies
1/2 cup semi-sweet chocolate chips
1 tablespoon heavy cream
6 ounces cream cheese, softened
1 1/4 cups powdered sugar
1/2 teaspoon vanilla extract for filling
6 whole Oreo cookies, halved for topping
2 tablespoons pink and red heart sprinkles
1 teaspoon edible gold sprinkles
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl.
3. Beat the butter, brown sugar, and granulated sugar until light and fluffy.
4. Mix in the egg and vanilla extract until smooth.
5. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the crushed Oreo cookies.
6. Scoop the dough onto the baking sheets, spacing the cookies evenly apart.
7. Bake for 9 to 11 minutes, then cool on the pan for 5 minutes before transferring to a wire rack.
8. Beat the cream cheese, powdered sugar, and filling vanilla until smooth.
9. Spread or pipe the filling onto half of the cooled cookies, then top with the remaining cookies to make sandwiches.
10. Melt the chocolate chips with the heavy cream, then drizzle over the tops of the cookies.
11. Decorate with Oreo halves, heart sprinkles, and edible gold sprinkles.
12. Let the chocolate set before serving or storing.
Notes
Use room temperature butter and cream cheese for the smoothest dough and filling.
Do not overbake the cookies or they will lose their soft bakery-style center.
