Description
Irish Brown Soda Bread is a hearty, no-yeast loaf made with whole wheat flour, buttermilk, and baking soda. With a nutty flavor, tender crumb, and crisp crust, it’s the perfect rustic bread to serve warm with butter or alongside soups.
Ingredients
240 g whole wheat flour
120 g all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon brown sugar (or honey)
50 g cold butter, cubed
300 ml buttermilk
Instructions
1. Preheat oven to 425°F (220°C) and grease a loaf pan or line a baking sheet.
2. In a large bowl, whisk whole wheat flour, all-purpose flour, baking soda, salt, and brown sugar.
3. Cut in cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
4. Pour in buttermilk and stir gently until just combined. Do not overmix.
5. Shape dough into a round or press into loaf pan. Score a deep cross on top.
6. Bake for 35–45 minutes, until golden and a skewer inserted comes out clean.
7. Cool on a wire rack before slicing.
Notes
Don’t overmix the dough; it’s meant to be rustic and slightly shaggy.
Use a sharp knife to score the cross deeply so the center bakes evenly.
For extra flavor, add 1–2 tablespoons of oats, seeds, or chopped nuts.
