Description

Walking Taco Casserole combines crunchy corn chips, seasoned ground beef, and gooey cheese into one irresistible layered dish. Topped with fresh lettuce, tomatoes, and sour cream, it’s the perfect easy dinner for taco lovers. Quick to prep and totally satisfying, this casserole turns classic taco flavors into a comforting family-style bake.


Ingredients

1 pound ground beef

1 packet taco seasoning

1 cup tomato sauce

1 cup canned black beans, drained and rinsed

4 cups corn chips (like Fritos)

2 cups shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sour cream


Instructions

1. Preheat oven to 375°F (190°C).

2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease.

3. Stir in taco seasoning, tomato sauce, and black beans. Let simmer for 5–7 minutes.

4. In a 9×13-inch baking dish, layer the bottom with corn chips.

5. Spoon the seasoned beef mixture evenly over the chips.

6. Sprinkle cheddar cheese generously over the top.

7. Bake uncovered for 15–20 minutes or until cheese is melted and bubbly.

8. Remove from oven and let rest for 5 minutes.

9. Top with shredded lettuce, diced tomatoes, and sour cream.

10. Serve immediately while warm and cheesy.

Notes

For extra crunch, reserve a handful of corn chips to sprinkle on top after baking.

Want it spicier? Add diced jalapeños or hot sauce to the meat mixture.

If you’re making it ahead, store the cooked filling separately and assemble just before baking to keep chips from getting soggy.
