Description

Golden roasted corn gets a bold upgrade with this cowboy butter twist—a mix of garlic, herbs, lemon, and smoky spice. It’s the ultimate BBQ side that always disappears fast.


Ingredients

4 ears of corn on the cob

1/2 cup unsalted butter

3 cloves garlic, minced

1 tablespoon lemon juice

2 tablespoons chopped fresh parsley

1/2 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat oven to 425°F (220°C) or heat grill to medium.
  2. Line a baking sheet with parchment or foil. Place corn on sheet.
  3. Melt butter in a small saucepan over low heat. Add garlic and cook for 1 minute.
  4. Stir in lemon juice, parsley, red pepper flakes, paprika, salt, and pepper. Simmer briefly.
  5. Brush corn generously with cowboy butter. Reserve some for basting.
  6. Roast for 25 minutes, turning and basting halfway through. For grilling, cook for 10-12 minutes.
  7. Brush with remaining butter. Sprinkle with Parmesan if using. Serve hot.
