Ingredients
4 ears of corn on the cob
1/2 cup unsalted butter
3 cloves garlic, minced
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1/2 teaspoon red pepper flakes (adjust to taste)
1 teaspoon smoked paprika
Salt and black pepper, to taste
1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 425°F (220°C) or heat grill to medium.
- Line a baking sheet with parchment or foil. Place corn on sheet.
- Melt butter in a small saucepan over low heat. Add garlic and cook for 1 minute.
- Stir in lemon juice, parsley, red pepper flakes, paprika, salt, and pepper. Simmer briefly.
- Brush corn generously with cowboy butter. Reserve some for basting.
- Roast for 25 minutes, turning and basting halfway through. For grilling, cook for 10-12 minutes.
- Brush with remaining butter. Sprinkle with Parmesan if using. Serve hot.
