Fudgy, chewy, and utterly satisfying!
Ingredients
1 ½ cups Medjool dates, pitted and soft
1 cup raw walnuts
½ cup raw almonds
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
¼ teaspoon sea salt
(Optional) ¼ cup chopped dark chocolate or dried cranberries
Instructions
1. If your dates are dry, soak them in warm water for 10 minutes, then drain.
2. Add walnuts and almonds to a food processor and pulse until finely chopped but still textured.
3. Add the dates, cocoa powder, vanilla, and sea salt. Blend until a sticky dough forms.
4. If mixture seems too dry, add 1–2 teaspoons of water and blend again.
5. Line an 8×8-inch pan with parchment paper and press the mixture firmly into it using your hands or a spatula.
6. Refrigerate for at least 1 hour until firm.
7. Remove from pan, slice into squares, and serve.
8. Store in the fridge for up to 7 days or freeze for up to 2 months.
Notes
Use soft Medjool dates for the best binding and sweetness. If dry, always soak first.
Press the dough firmly into the pan to ensure clean, tight slices.
Add-ins like chopped chocolate or cranberries make each bite exciting and customizable.
