Ingredients
2 cups cooked turkey, shredded
6 cups chicken or turkey broth
2 cups egg noodles
2 carrots, sliced
2 stalks celery, sliced
1 yellow onion, diced
2 cloves garlic, minced
1 tablespoon olive oil or butter
1 bay leaf
1 teaspoon thyme (dried or 1 tablespoon fresh)
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Heat olive oil or butter in a large pot over medium heat.
2. Add diced onions, carrots, and celery. Sauté for 5–7 minutes until softened.
3. Stir in minced garlic and cook for an additional 1–2 minutes.
4. Pour in the broth, then add bay leaf and thyme. Bring to a gentle boil.
5. Reduce heat and simmer for 15 minutes to blend the flavors.
6. Stir in shredded turkey and egg noodles.
7. Cook uncovered for 8–10 minutes until noodles are tender.
8. Season with salt and black pepper to taste.
9. Remove the bay leaf.
10. Garnish with fresh parsley before serving, if desired.
Notes
For best texture, cook noodles separately if you plan to store leftovers.
Add a splash of lemon juice at the end for a brighter flavor.
