Description
Trisha Yearwood’s Spinach Casserole is a creamy, savory comfort dish layered with cheese, sour cream, and tender spinach. It’s simple to prepare, satisfying to eat, and ideal as a side or main course for any meal. Perfect for holidays, potlucks, or cozy weeknights.
Ingredients
10 oz frozen chopped spinach, thawed and drained
8 oz cream cheese, softened
1 cup sour cream
1 cup shredded cheddar cheese
2 tablespoons butter, melted
2 large eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Thaw the spinach completely and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
3. In a large bowl, mix together the cream cheese, sour cream, and melted butter until smooth.
4. Add the eggs, salt, and pepper. Whisk until combined.
5. Fold in the drained spinach until evenly incorporated.
6. Spread the spinach mixture into the prepared baking dish.
7. Sprinkle shredded cheddar cheese over the top evenly.
8. Bake for 30 minutes, or until the top is golden and bubbling around the edges.
9. Let it rest for 5 minutes before serving.
Notes
Use freshly grated cheese for a smoother, meltier top layer.
Squeeze out every bit of liquid from the spinach to avoid sogginess.
For a richer flavor, try adding a pinch of garlic powder or nutmeg to the mixture.
