Description

Tomato Cucumber Mozzarella Salad is a fresh, vibrant dish that brings together juicy tomatoes, crisp cucumbers, and creamy mozzarella, all dressed in olive oil and topped with aromatic basil. Perfect for picnics, quick lunches, or as a refreshing side.


Ingredients

1 pint cherry tomatoes

1 large cucumber

8 oz mozzarella balls (bocconcini or ciliegine)

1/4 cup fresh basil

2 tablespoons extra virgin olive oil

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper


Instructions

1. Rinse cherry tomatoes and cucumber. Halve the tomatoes and slice the cucumber into rounds.

2. If mozzarella balls are large, halve them for bite-sized pieces.

3. In a large bowl, combine tomatoes, cucumber, and mozzarella.

4. Drizzle with olive oil, then season with salt and black pepper.

5. Chop and add fresh basil, folding gently into the salad.

6. Chill for 10–15 minutes before serving or enjoy immediately.

Notes

Use room temperature mozzarella for a creamier texture and better flavor absorption.

Add a splash of balsamic glaze for a sweet tangy upgrade.
