These Ultimate Stuffed Beef Burritos are packed with savory ground beef, fluffy rice, black beans, and melty cheese, all rolled in a soft flour tortilla and topped with enchilada sauce and more cheese. Ingredients
1 lb ground beef
1 cup cooked rice
1 cup black beans, drained and rinsed
1 packet taco seasoning
1 ½ cups shredded cheddar cheese
6 large flour tortillas
1 cup enchilada sauce
½ cup sour cream
2 tbsp chopped fresh cilantro (optional)
Instructions
1. In a large skillet over medium-high heat, cook ground beef until browned. Drain excess fat.
2. Stir in taco seasoning and ¼ cup water. Simmer for 2–3 minutes until well blended.
3. In a bowl, combine cooked rice, black beans, and half the cheddar cheese. Add in the seasoned beef and mix well.
4. Slightly warm the tortillas to make them pliable. Spoon the filling into each, fold the sides, and roll tightly.
5. Place burritos seam-side down in a baking dish. Pour enchilada sauce over them and sprinkle with remaining cheese.
6. Bake at 375°F for 15–20 minutes until cheese is melted and bubbly.
7. Serve hot with a dollop of sour cream and sprinkle of cilantro if desired.
Notes
Slightly warming the tortillas makes them easier to roll without cracking.
Don’t overfill the tortillas — a compact roll bakes and holds better.
For freezer prep, skip the sauce and cheese topping until you’re ready to reheat.
