This Unstuffed Pepper Skillet brings all the comfort of traditional stuffed peppers in a fast, no-fuss one-pan dinner. Savory ground beef, sweet bell peppers, and tender rice simmer together in a rich tomato broth for a cozy, satisfying meal perfect for weeknights.
Ingredients
1 pound ground beef
1 cup diced onion
1 tablespoon minced garlic
1 ½ cups diced bell peppers (red, green, yellow)
1 ½ cups tomato sauce
1 cup uncooked white rice
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. In a large skillet, cook the ground beef over medium-high heat, breaking it apart as it browns.
2. Once halfway browned, add diced onion and cook until softened, about 3–4 minutes.
3. Stir in minced garlic and cook for 30 seconds until fragrant.
4. Add bell peppers and cook for another 4–5 minutes until they begin to soften.
5. Pour in tomato sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Stir well.
6. Stir in uncooked rice and pour in beef broth. Bring to a gentle boil.
7. Reduce heat to low, cover, and simmer for 20–25 minutes until rice is tender.
8. Remove from heat, fluff rice with a fork, and adjust seasoning if needed.
9. Garnish with parsley or shredded cheese if desired. Serve warm.
Notes
Use a mix of colored bell peppers for more depth and sweetness.
For extra richness, stir in ½ cup shredded cheddar cheese before serving.
If using brown rice, increase broth and simmer time by 15–20 minutes.
