Description

Tasty Chicken and Dumplings is a hearty one-pot classic made with tender chicken, fluffy homemade dumplings, and a savory broth packed with carrots, peas, and comforting herbs. Ingredients

2 pounds chicken thighs or breasts

1 cup carrots, diced

1 cup celery, diced

1 medium yellow onion, chopped

2 cloves garlic, minced

1 cup frozen peas

6 cups chicken broth

2 tablespoons butter

2 tablespoons all-purpose flour (for broth)

2 cups all-purpose flour (for dumplings)

1 tablespoon baking powder

1 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Heat butter in a large Dutch oven over medium-high heat. Season chicken with salt and pepper, sear on both sides until golden. Remove and set aside.

2. In the same pot, sauté onion, carrots, celery, and garlic until softened. Stir in 2 tablespoons flour and cook for 1 minute.

3. Slowly add chicken broth while whisking to avoid lumps. Bring to a simmer.

4. Return chicken to the pot and cook covered for 25–30 minutes. Remove, shred or chop, and return to the pot.

5. In a mixing bowl, combine 2 cups flour, baking powder, and salt. Add milk and stir until a soft dough forms.

6. Drop spoonfuls of dumpling dough onto the bubbling soup. Cover and simmer for 15 minutes—don’t lift the lid.

7. Stir in peas during the last 5 minutes. Adjust salt and pepper.

8. Garnish with fresh parsley before serving, if desired.

Notes

Don’t peek while the dumplings are cooking! Steam is key to keeping them fluffy.

Use chicken thighs for juicier results, or breasts for a leaner option.

Add a splash of cream at the end for a richer, stew-like version.
