Description

Taco Bake Casserole is a flavorful, crowd-pleasing dish that layers seasoned ground meat with beans, corn, and salsa, all topped with melted cheese and crunchy chips. It’s a perfect fusion of tacos and a hearty baked dinner, easy to prepare and great for leftovers.


Ingredients

1 lb ground beef or ground turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned and drained)

1 cup salsa (your favorite variety)

2 cups shredded cheddar cheese (or Mexican blend)

1/2 cup chopped red onion

1/4 cup sliced jalapeños (fresh or pickled)

1 bag tortilla chips or 2 cups crushed tortilla chips

Optional toppings: sour cream, chopped cilantro, diced avocado, hot sauce


Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and 1/4 cup water; stir and simmer for 2-3 minutes.
  3. Mix in black beans, corn, and salsa. Simmer for another 2-3 minutes, then remove from heat.
  4. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  5. Spread a layer of crushed tortilla chips on the bottom.
  6. Pour the meat mixture over the chips and top with shredded cheese.
  7. Bake for 15-20 minutes until the cheese is bubbly. Broil an extra 2 minutes if desired.
  8. Garnish with red onions and jalapeños. Let rest for 5 minutes before serving. Add optional toppings if desired.
