Description

This cozy side dish brings together roasted apples and carrots with a glossy maple-Dijon glaze. It’s sweet, savory, and slightly tangy with a herby finish. Perfect for a holiday table or a simple weeknight dinner.


Ingredients

3 large carrots

2 large apples (Honeycrisp or Fuji)

2 tablespoons maple syrup

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Peel carrots and slice them diagonally into uniform pieces. Core and slice apples into wedges, leaving the skin on.

2. In a large mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme leaves.

3. Add sliced apples and carrots to the bowl. Toss gently to coat them well in the maple-Dijon mixture.

4. Spread the coated mixture evenly on a parchment-lined baking sheet.

5. Roast in a preheated 400°F (200°C) oven for 25–30 minutes, flipping halfway through.

6. Once tender and caramelized, remove from oven and garnish with more fresh thyme before serving.

Notes

For added depth, roast the carrots for 10 minutes alone before adding apples to avoid over-softening the fruit.

Use parchment paper to prevent sticking and make cleanup easier.

Fresh thyme adds a fragrant finish, but rosemary or sage works beautifully as substitutes.
