Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 tablespoon red food coloring

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/4 cup powdered sugar

1/2 cup cream cheese frosting (store-bought or homemade)


Instructions

1. In a mixing bowl, beat cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth. Scoop into teaspoon-sized balls, place on parchment, and freeze for 20–30 minutes.

2. In a separate bowl, mix melted butter, granulated sugar, and cocoa powder until shiny.

3. Add eggs one at a time, mixing well after each. Stir in red food coloring and vanilla extract.

4. Gently fold in all-purpose flour until fully incorporated.

5. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.

6. Spoon about 1 tablespoon of brownie batter into each muffin cup. Place one frozen cheesecake ball in the center of each, and cover with more batter to seal.

7. Bake for 12–15 minutes until the edges are set and tops slightly firm.

8. Let cool in the pan for 5 minutes, then transfer to a cooling rack.

9. Once cooled, pipe or spread cream cheese frosting on top of each brownie bite.

10. Garnish with red velvet crumbs or white chocolate shavings if desired.

Notes

Freeze the cheesecake filling to keep it centered while baking — it prevents melting and sinking.

Don’t overbake — the bites continue to set as they cool, so remove them as soon as the edges are firm.

Let the bites cool completely before frosting to avoid melting and sliding.
