Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
1 cup pineapple juice
0.5 cup brown sugar
0.5 cup soy sauce
2 cloves garlic, minced
0.25 cup ketchup
2 tablespoons cornstarch
2 tablespoons water
Instructions
1. In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, ketchup, and minced garlic until fully blended.
2. Place chicken in a single layer at the bottom of your crockpot.
3. Pour the sauce mixture over the chicken, ensuring each piece is coated.
4. Cover and cook on LOW for 6 hours or HIGH for 3–4 hours.
5. Remove chicken from crockpot and set aside.
6. In a small bowl, mix cornstarch and water to create a slurry.
7. Add slurry to the sauce in the crockpot and stir.
8. Cook on HIGH for 10–15 minutes until sauce thickens.
9. Return chicken to crockpot, coat in sauce, and serve over rice or noodles.
Notes
Use chicken thighs for extra tenderness—they hold up better in slow cooking.
For a thicker sauce, allow extra time after adding the cornstarch slurry to simmer uncovered.
Want more texture? Stir in pineapple chunks during the last hour of cooking.
