Description

A creamy, sweet, and tangy macaroni salad made with elbow pasta, crisp vegetables, and a classic Amish-inspired dressing. Ideal for potlucks, BBQs, or casual weekday sides, this nostalgic dish is both refreshing and hearty.


Ingredients

2 cups elbow macaroni

1 cup mayonnaise

1/4 cup sugar

1 tablespoon yellow mustard

2 tablespoons apple cider vinegar

1/2 cup celery, finely chopped

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1/4 cup green bell pepper, finely chopped

Salt and pepper to taste


Instructions

  1. Cook the macaroni according to package directions until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together mayonnaise, sugar, mustard, and apple cider vinegar until smooth.
  3. Chop all vegetables evenly.
  4. Combine macaroni and chopped vegetables in a large bowl.
  5. Pour dressing over and mix gently until well-coated.
  6. Chill in the refrigerator for at least 1 hour before serving.
