Ingredients
1 cup chopped pecans
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup vegetable oil
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
2. In a medium bowl, mix flour, baking soda, and salt. Toss in the chopped pecans until coated.
3. In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, buttermilk, and vanilla extract until well combined.
4. Gradually fold the dry mixture into the wet ingredients using a spatula. Mix until just combined—do not overmix.
5. Pour the batter into the prepared loaf pan. Smooth the top evenly.
6. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Let the bread cool fully before slicing to avoid crumbling.
For an extra flavor boost, lightly toast the pecans before mixing them in.
You can substitute buttermilk with 1/2 cup milk + 1/2 tablespoon lemon juice (let sit 5 mins).
