Description

This Super Easy Mexican Beef and Rice Skillet is a one-pan wonder that’s ready in under 30 minutes. Ground beef, fluffy rice, and vibrant veggies come together in a rich, spiced tomato base, all finished with melty cheese. It’s hearty, comforting, and weeknight-friendly!


Ingredients

1 lb ground beef

1 cup long-grain white rice (uncooked)

1 small onion, chopped

2 cloves garlic, minced

1 cup tomato sauce

2 tablespoons taco seasoning

1 cup canned black beans, drained and rinsed

1 cup frozen corn kernels

2 1/4 cups beef broth

1 cup shredded cheddar cheese

Optional: chopped fresh cilantro, diced tomatoes for garnish


Instructions

1. In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.

2. Add chopped onion and minced garlic to the skillet. Cook until the onion is soft and fragrant.

3. Stir in the rice, tomato sauce, taco seasoning, black beans, corn, and beef broth. Mix well to combine.

4. Cover the skillet with a lid and reduce the heat to low. Let it simmer for 18–20 minutes, until the rice is cooked and liquid is absorbed.

5. Sprinkle shredded cheese over the top. Cover again for 2–3 minutes to melt the cheese.

6. Garnish with fresh cilantro and diced tomatoes if desired. Serve warm.

Notes

Let the skillet rest for 5 minutes after cooking to allow the flavors to meld and the rice to firm up slightly.

You can substitute ground turkey for a leaner version with the same delicious results.

To reheat, add a splash of broth or water, cover, and warm on low heat to retain moisture.
