Description
This Summer Kielbasa Pasta is a one-skillet creamy dinner packed with smoky sausage, sweet corn, and tender pasta in a cheesy, velvety sauce. It’s quick to make, comforting to eat, and perfect for both busy weeknights and summer gatherings.
Ingredients
1 pound smoked kielbasa sausage, sliced into coins
12 ounces gemelli or rotini pasta, cooked and drained
1 cup sweet corn kernels (fresh, canned, or frozen)
1 small onion, chopped
2 cloves garlic, minced
4 ounces cream cheese
1 cup milk or half-and-half
3/4 cup shredded Parmesan cheese
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons chopped parsley (optional)
Instructions
1. Slice the kielbasa into coins and sear in a large skillet over medium heat until browned. Remove and set aside.
2. In the same skillet, melt butter and sauté onion and garlic until softened and fragrant.
3. Add cream cheese and milk or half-and-half to the skillet. Stir until melted and smooth.
4. Stir in Parmesan cheese, salt, pepper, and Italian seasoning. Let the sauce simmer gently.
5. Return the kielbasa and add corn to the skillet. Cook for 2–3 minutes to heat through.
6. Add the cooked pasta to the skillet and toss everything together until evenly coated in sauce.
7. Garnish with parsley and extra Parmesan before serving.
Notes
For extra creaminess, reserve 1/4 cup pasta water to adjust the sauce texture if needed.
Freshly grated Parmesan will melt smoother and avoid any graininess in the sauce.
This dish is best served fresh—reheat gently with added milk to loosen the sauce.
