Ingredients

2 cups all-purpose flour

1 teaspoon vanilla extract

8 ounces cream cheese, softened

1/3 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy cream

2 cups fresh strawberries, sliced

2 tablespoons sugar

1 tablespoon lemon juice


Instructions

1. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.

2. In a separate bowl, combine the eggs, milk, melted butter, and vanilla.

3. Pour the wet mixture into the dry ingredients and mix until just combined. Let the batter rest.

4. In another bowl, beat the cream cheese until smooth.

5. Add powdered sugar and vanilla to the cream cheese, and mix until fluffy.

6. Slowly pour in the heavy cream and beat until light and spreadable. Refrigerate the filling until use.

7. Heat a waffle maker and lightly grease it.

8. Pour the batter into the waffle iron and cook until golden and crisp. Repeat with remaining batter.

9. In a small saucepan, combine strawberries, sugar, and lemon juice. Cook on medium heat for 5–7 minutes until syrupy.

10. To assemble, layer cheesecake filling between two waffles.
