Description

A comforting and indulgent dish featuring juicy seared steak bites tossed in a rich garlic parmesan cream sauce with perfectly cooked rotini. This hearty meal delivers big flavor in under an hour, making it ideal for weeknights or weekend indulgence.


Ingredients

1 lb sirloin or ribeye steak, cut into bite-sized cubes

12 oz rotini pasta

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated parmesan cheese

2 tbsp butter

1 tbsp olive oil

1 tsp paprika

1/2 tsp black pepper

1 tsp salt (plus more for pasta water)

2 tbsp fresh parsley, chopped


Instructions

1. Pat steak dry and cut into bite-sized cubes. Season with salt, pepper, and paprika.

2. Heat a cast iron skillet over medium-high heat. Add olive oil and butter.

3. Sear steak bites for 2-3 minutes per side until golden brown. Remove and set aside.

4. In a large pot, bring salted water to a boil. Cook rotini until al dente. Reserve 1 cup of pasta water, then drain.

5. In the same skillet, reduce heat and melt another small knob of butter. Sauté garlic for about 1 minute.

6. Pour in heavy cream and simmer for 2-3 minutes.

7. Gradually whisk in parmesan until sauce is smooth and creamy.

8. Add rotini and a splash of reserved pasta water. Stir to coat evenly.

9. Return steak bites to skillet and gently mix everything together.

10. Adjust seasoning if needed, garnish with chopped parsley, and serve hot.

Notes

For maximum tenderness, let the steak rest after cooking before adding it back to the sauce.

Use freshly grated parmesan for the smoothest, most flavorful sauce—pre-shredded versions may clump.

To avoid breaking the sauce, don’t let the cream come to a rolling boil—simmer gently.
