Ingredients
1 lb steak (ribeye, sirloin, or tenderloin), cut into 1-inch cubes
8 oz shell pasta
3 tablespoons butter, divided
3 garlic cloves, minced
1 ½ cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Sear the Steak Bites: Heat a heavy skillet over high heat. Add 1 tablespoon of butter and sear the steak cubes in batches until browned on all sides. Remove from skillet and let rest.
- Boil the Pasta: In a large pot of salted water, cook the shell pasta until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- Make the Garlic Butter Base: Reduce skillet heat to medium-low, add 2 tablespoons of butter, and sauté the minced garlic until fragrant (about 30 seconds).
- Create the Alfredo Sauce: Pour in heavy cream, bring to a gentle simmer, and stir in the Parmesan cheese. Mix until the sauce is smooth and creamy.
- Combine Pasta and Sauce: Add the cooked shell pasta to the sauce, tossing to coat. Use reserved pasta water to adjust consistency if needed.
