Ingredients

1 lb chicken breasts (boneless, skinless)

1 cup buttermilk

2 tablespoons hot sauce

1 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper

1 large egg

1/2 cup mayonnaise

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder (for sauce)

1 teaspoon lemon juice

4 brioche or sesame buns

1/2 cup pickle slices

Oil for frying


Instructions

1. Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness.

2. In a bowl, mix buttermilk and hot sauce. Submerge chicken, cover, and refrigerate for at least 1 hour or overnight.

3. In another bowl, mix mayo, smoked paprika, garlic powder, and lemon juice. Chill to allow flavors to blend.

4. In a separate bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, and cayenne.

5. Beat the egg in a separate bowl.

6. Remove chicken from marinade. Dredge in flour mix, dip in egg, then coat again in flour mix.

7. Heat oil to 350°F. Fry chicken 4–5 minutes per side, or until golden and internal temp reaches 165°F.

8. Let chicken rest on a wire rack.

9. Toast buns lightly.

10. Spread sauce on bottom bun, add pickles, place fried chicken on top, then more sauce and the top bun.

Notes

For extra crispy texture, let the dredged chicken rest in the fridge for 15 minutes before frying.

Use a meat thermometer to avoid under or overcooking—165°F is your perfect target.

Toasting the buns enhances both flavor and structure, keeping everything together as you bite in.
