Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
0.5 teaspoon salt
1.25 cups buttermilk
2 large eggs
0.25 cup melted butter
1 cup shredded sharp cheddar cheese
2 fresh jalapeños, finely chopped
2 tablespoons chopped cilantro (optional)
Instructions
1. Preheat your waffle iron and lightly grease it with nonstick spray or butter.
2. In a large mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
3. In a separate bowl, whisk eggs, then add buttermilk and melted butter. Mix well.
4. Pour wet ingredients into dry and fold gently until just combined.
5. Stir in shredded cheddar and chopped jalapeños (plus cilantro if using).
6. Pour batter into the waffle iron and cook until golden and crisp, about 4–6 minutes.
7. Serve hot with optional toppings like sour cream, hot honey, or extra jalapeños.
Notes
For extra crisp edges, let the waffles rest on a wire rack instead of a plate.
If freezing, place parchment between waffles and reheat in a toaster or oven.
Adjust jalapeños to taste—remove seeds for mild heat, or keep some in for a kick.
