Ingredients
2 boneless, skinless chicken breasts
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup Greek yogurt
1 tbsp lemon juice
1/2 tsp dried mint or oregano
3 cups mixed greens
1 cup cherry tomatoes, halved
Instructions
- In a small bowl, mix smoked paprika, chili powder, garlic powder, onion powder, salt, and pepper.
- Rub the chicken with olive oil and coat with the spice mixture.
- Heat a grill pan or skillet over medium-high. Cook chicken 5–6 minutes per side until cooked through. Let rest, then slice.
- For the sauce, whisk together Greek yogurt, lemon juice, salt, and dried herbs.
- Arrange mixed greens and tomatoes on plates. Top with sliced chicken.
- Drizzle yogurt sauce over and garnish as desired.
