Description

Ingredients

2 boneless, skinless chicken breasts

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

1/2 cup Greek yogurt

1 tbsp lemon juice

1/2 tsp dried mint or oregano

3 cups mixed greens

1 cup cherry tomatoes, halved


Instructions

  1. In a small bowl, mix smoked paprika, chili powder, garlic powder, onion powder, salt, and pepper.
  2. Rub the chicken with olive oil and coat with the spice mixture.
  3. Heat a grill pan or skillet over medium-high. Cook chicken 5–6 minutes per side until cooked through. Let rest, then slice.
  4. For the sauce, whisk together Greek yogurt, lemon juice, salt, and dried herbs.
  5. Arrange mixed greens and tomatoes on plates. Top with sliced chicken.
  6. Drizzle yogurt sauce over and garnish as desired.
